Allergic to Corn?

A few years ago I discovered that I was allergic to corn.


At the time I thought that I would certainly miss corn on the cob, but it was not that big of a deal. Wow, I was way off. We got a long list of corn products. There were a lot of strange names and no indication that corn was involved in most of them. I discovered that almost everything seemed to have corn in it. We started going through our pantry and cleaning out products with corn. That turned out to be most of everything we had. Even the bread we liked had corn syrup added to make it toast.





It was time to start cooking.

I lived on a Spartan diet until I figured out what to do. As you know, if it comes in a bag and is delivered through the car window, you can't eat it. If it is already cooked, you probably can't eat it. It was time to convert and develop some recipes. The first one was catsup. Once I had that it was a matter of converting my BBQ sauce recipes. Then it started getting fun. I made a couple boatloads of catsup and BBQ sauce before it started coming together.



We have long been interested in Smoking and Grilling Meats and developing BBQ Recipes. We had a BBQ team and competed in several contests around Kansas City, including four appearances at the American Royal BBQ Contest.

We use it like they use it in KC. After we remove the brisket, ribs, chicken or Boston Butt from the smoker, we glaze it with our Corn Free BBQ Sauce while it is still hot. It rests for several minutes before slicing. It can also be basted on, during the last minutes of smoking. For some, that is enough, especially if you have a great rub recipe.

It can also be mixed in with pulled meats to add seasoning for sandwiches. Also, I baste it on in the last few minutes of grilling for a great barbecue taste. Grill long enough to set the sauce and caramalize it in places. This also makes great gifts.

Corn Free Raspberry BBQ Sauce Recipe

This is my newest BBQ sauce Recipe. The raspberry component stays in the background and adds interest, but won't slap you in the face. When we lived in Kansas City we bought a ton of Flower of the Flames Raspberry BBQ Sauce. This is our substitute as we now live 1000 miles from KC. This is a great springboard recipe, with many variations that will get you started developing your own twists. The full recipe makes a lot, perfect for giving as gifts. People always appreciate thoughtful, homemade gifts, and this one will please. The recipe has variations for reduced volumes too, as well as many substitution ideas.





That's Not All You Get

We have developed several recipes that support Barbeque and Grilling. How about some grilled shrimp or chicken wings glazed with a Citrus Glaze. Check out the shrimp. They are wrapped in bacon, grilled and basted with the Citrus Glaze. I will include the Citrus Glaze recipe. These would make you the king of a Tailgate Party.

I'm Not Stopping There, Brisket Rub

We have Modified our BBQ Rub recipes over the years and it is still evolving. I use a pepper based rub for Brisket and another for Ribs, Chicken and Pork Shoulder. Look at the Brisket below. The Bark left by the smoke and rub, enhanced by a glaze of Sauce make this as good as it looks. I trim the fat down to 1/8 inch on my briskets. Then I pile on the rub and shove the pile around until the brisket is totally covered with the rub. I will include the Brisket Rub recipe.

There is more, Rib, Chicken and Pork Rub

I use a spice rub for Ribs, Chicken and Pork Shoulder. I trim my ribs, removing the membrane on the back. I then squirt on some ballpark mustard and smear it around, then I apply a thin but even coating of rub. I like putting the ribs on a rack since I have such a small cooking surface in my smoker. I use a Terra cotta saucer that I cover with foil that protects the ribs from direct heat of the lump charcoal. I smoke for Three hours at 225F using hickory for smoke.

I then remove the ribs and wrap in a Pan Saver bag then tightly in foil. Back on the heat for one more hour at 225F. I unwrap them and glazed with my BBQ Sauce. I add some Turbinado sugar then dampen the sugar with more BBQ sauce. Back on the smoker for as much as one more hour. I take out the Terra cotta saucer near the end so I can give the ribs some direct heat, caramelizing the sauce in spots. They got like the ribs in this second rib photo. These Baby Backs were great, but I also like Spare Ribs trimmed St. Louis Style. The meat from the remainder of the slab is trimmed off then ground and used to make 'Mc Rib' sandwiches. I will include the recipe for my Ribs, Chicken and Pork Rub.
